All of my songs suddenly have the first two verses unchecked by default in display mode. I can change it on each individual song, but I'm not sure how they got set this way. How do I change the default back to checked.

The problem you mention occurs occasionally.
Other people have reported it to me in the past.
Unfortunately, all my attempts to reproduce the problem have failed so far, making it difficult to solve.
Question
What version of VideoPsalm are you using? Please let me know.
The easiest way to correct the problem is to send me your songbook file, and I'll send it back to you with all the verses selected.
